When Ground Beef goes on Sale

It's nice to have an extra recipe in your pocket.

Spinach and Potato Casserole

1 pound ground beef
1 or 2 cloves of garlic, minced
1 small onion, finely chopped or minced
1/3 cup of fresh mushrooms, sliced
1 pkg of frozen chopped spinach (thawed and drained)
dash of nutmeg

4 potatoes, cooked and mashed
¼ cup sour cream
¼ cup milk
1/3 cup of cheddar cheese, grated.

1. Preheat the oven to 400°.
2. In a skillet, brown and drain fat from ground beef. Add onion, mushrooms, and garlic, and cook till tender. Add spinach and nutmeg. Cook till spinach is hot.
3. Add milk and sour cream to mashed potatoes, and then add to skillet, and mix with ground beef. Salt and pepper to taste.
4. Spoon into 9" greased brownie or cake pan. Sprinkle with cheese.
5. Bake 15 to 20 minutes till cheese is melted. (and mixture is puffy)
