Winter Casserole
Ingredients
1 can cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
¼ cup onion, minced (optional)
2 10oz pkgs frozen chopped broccoli
1 10oz pkg frozen cauliflower
¼ cup shredded carrot
8 ounces shredded Cheddar cheese
Salt
Pepper
Paprika
Directions
1. Lightly grease an oblong baking dish with margarine.
2. In a medium sized bowl, whisk together soup, mayonnaise, beaten egg, and minced onion.
3. Place frozen broccoli and cauliflower into large bowl, and break them up.
4. Spoon soup-mayonnaise mixture on top of broccoli and mix well. Add cheese and mix well.
5. Spoon mixture into prepared baking dish. Smooth mixture as level as possible.
6. Season to taste with salt, pepper, and paprika.
7. Bake at 350° for 45 minutes to 1 hour. Serve hot.
Top with breadcrumbs in last 5 minutes.

This dish sounds so easy and good, not to mention healthy for you too.
With the economy the way it is, this dish sounds very economical too.
